This sparkling wine is made from 100% Chardonnay grapes and was fermented in 100% stainless steel.
It spent 52 months on yeast. Tirage Bottled: January 2019. Disgorge: May 2023. Dosage: 3 g/L; we use less sugar due to the longer time on the yeast.
Notes
Bursts of tiny bubbles appear as you swirl your glass opens up aromas of honey backed by Meyer lemon meringue. These aromatics are followed by mature caramel flavors and brioche toast balanced by bracing acidity. All these flavors are more rounded and polished by spending that extra time on yeast.
