This Sauvignon Blanc was pressed to tank, then racked the following day for clean juice and a clean fermentation Cold fermentation in tank 10 days. Moved to stainless steel barrels. No malolactic is allowed. Aged 5 months later to retain freshness.
Notes
Tropical fruits, especially guava, and hints of Meyer lemon on the nose followed with bright acidity and a clean finish on the palette .
