There are other hopped ciders in America–nearly all of which try to be beers. We saw the availability of some new hops as an opportunity to create another cider with food-friendly complexity. Equinox is named for the Equinox hop (now renamed Ekuanot) that gives this cider green grassy and lightly citrus notes reminiscent of a New Zealand Sauvignon Blanc. Indeed, cider refreshment with wine complexity!

Over a dozen hops were trialed before we found one that resulted in a complex, wine-like flavor profile--not a hop-forward profile. This isn't a cider that wants to be a beer but a cider that has layers of complexity.

The Cider Farm is a cider and spirits brand based on an organic orchard in Mineral Point, Wisconsin. The Cider Farm grows only true cider apples, apples cultivated for making alcoholic beverages, not for eating. These apples have tannins, which give depth of flavor and mouthfeel to the beverages they comprise. The Cider Farm produces a rang of ciders from its European cider apples as well as America's only apple brandy made from true cider apples. These products are available throughout Wisconsin and in the Greater Chicago market.
