An annual limited release of our C. Cassis blackcurrant liqueur, aged for 8 months in small 15-gallon #3 charred American oak bourbon casks, verging into tawny port territory. The process brings in subtle maple notes from the bourbon, along with toasted spice undertones from the wood. The small barrels allow for light oxidation, giving this liqueur a nutty quality and a touch of caramelized salinity.
Several months later, it is subtly mature. The result is moody and complex. Best enjoyed neat or on the rocks.
