At the end of summer 2023, we took a surplus of green tomatoes and macerated them with sugar and distillate, coaxing out the bright, herbal character of the fruit and its tendrils. After letting it do its thing, we strained off the liquid, blended it with a New York State rosé, and tucked it all into an ex-pommeau barrel to rest for over a year.
After a quiet two-year process, it is a subtle, gentle expression of summer’s herbal beauty.
Storage: C. Cassis Green Tomato Aperitif is best kept in the fridge after opening and will last up to a year. If left unrefrigerated, it changes slowly with air, but it’s best used within 2–3 months.
Bottled in a 250ml vessel that feels equal parts potion and magic.
